If your ICC profiles are 'installed' in the correct folder on your computer, they will be available in Preview- here are the steps to print:

1. With an image open, select File>Print
2. Select your printer and paper size
3. From the menu labeled 'Preview' in the print window, select 'Color Matching'
4. Click the 'ColorSync' button
5. The 'Profile' menu will appear, click on it and select your ICC profile. If you don't see your profile listed, select 'Other Profiles . . .' at the bottom
6. This will open a list of all the ICC profiles installed in your computer. You can search or scroll to find the one you're looking for. Highlight the appropriate profile and click OK
7. From the pull-down menu now labeled 'Color Matching', click and select 'Quality and Media' (Canon Printers) or 'Printer Settings' (Epson Printers). Select the appropriate media type and print settings to match the Moab paper you are using.
8. Click Print

Thank You for this. The only 4 choices I see under PREVIEW in the print window are

Media and Quality

Paper Handling

Cover Page

No option for Color Matching

I'm running Mac High Sierra 10.13.3

Your printer was added to the system as an 'AirPrint' printer, not using the print driver. This disables nearly all the settings, and is why you don't have any profile options. To fix this issue:

1. Make sure you have the print driver software installed on your computer.
2. Open System Preferences, and click Printers & Scanners
3. From the printer list on the left, select the printer you're trying to use, and click the '-' button to delete it
4. Click the '+' to add a printer, and from the list select your printer. Below the list, there is a drop-down menu labeled 'Use'. It will automatically select 'AirPrint'- click on that menu and select the printer driver instead.
5. Finish the installation, and when you open preview, you should see all the options listed above.
